Very bad for the figure but oh so tasty and cooling on a hot day in Kolkata…

In ‘The Glass’, I mentioned a meal served to Suzanna and James by Suzanna’s sister, Charlotte – the Halloumi Casserole. It’s not just fictional James who likes this dish – it’s one of my favourites. I’ve provided the recipe below, so you can share in its delights if you like the sound of it (serves 4):

10 Baby potatoes, 10 shallots (peeled and halved), 20 green olives, 30 cherry tomatoes, 1 yellow or red capsicum, 1 large leak, 1 red chilli (finely chopped), 2 medium sweet potatoes, 1 pack halloumi, 150ml veg stock (I use veggie Oxo cubes) and a jar of pesto sauce.

  • In an ovenproof casserole pan gently fry the shallots, pepper and leek, add the cherry tomatoes, olives, and all the potatoes, pour over the stock and stir in the pesto and chillies.
  • Place in the oven and cook at 200 degrees C for 40 minutes.
  • Lightly pan fry the cubed halloumi, with minimal oil, then add to the casserole 10 minutes before serving, with focaccia or crusty bread.
